The concept of eating a low fat diet has been misunderstood and promoted in error for over 15 years. Part of the misconception is the belief that the body converts fat calories to fat much more readily than other calories. That is simply not true. We'll deal with that subject in more detail later.

Another error in the low fat diet is the belief that all dietary fat is unhealthy. The truth is that some fats are not desirable, but some types of fats are not only good for your health, they are absolutely essential. They are referred to as "essential fatty acids". These essential nutrients are required for proper formation and functioning of important brain and nervous system tissues. Deficiencies in these critical nutrients can lead to serious health problems.
